Sloppy Joes grow up… this is a childhood favorite of mine done healthier. No canned Sloppy Joe sauce; just fresh ingredients with a few quick fix helpers like ketchup and mustard! You can use lean ground beef if you wish, or even vegetarian crumbles. The ground chicken or turkey variety is as close as you can get while cutting out saturated fat and calories.
- 2 pounds, ground chicken or turkey
- 1 large onion, diced
- 1 green bell pepper, diced
- 4 tablespoons olive oil
- ¼ cup yellow mustard
- ¼ teaspoon cayenne pepper- increase to 1/2 teaspoon if you like it spicier
- ¼ teaspoon white pepper
- 1 teaspoon paprika
- 8 shakes, hot pepper sauce
- 2 tablespoon brown sugar
- 2 tablespoon apple cider vinegar
- 4 cloves garlic, crushed
- 1-1/3 cups organic or regular ketchup
- 2 tablespoons tomato paste
- kosher salt and freshly ground pepper to taste
Heat a large skillet to medium heat, adding oil when hot and then adding the onion. Reduce heat to medium low after a minute or two. Sauté the onions and the green pepper until the mixture has a nice golden color. Add the garlic and sauté for 1 minute. Add the ground chicken or turkey and sauté until the meat is fully cooked. Add the remaining ingredients and reduce heat to low and simmer for about 10 minutes. Adjust seasoning and serve hot on whole grain or white sesame hamburger buns.
